Banana Oat Pancakes
Sunday morning’s mean pancakes for breakfast in our house.
We all love this weekly ritual and treat, especially my step-sons. The best part is, they are super healthy, packed with fibre, and contain no wheat, dairy or sugar!
I changed up the recipe from week to week, depending on what’s in the house. E.g. I may add spinach, buckwheat, notes or other seeds…you can’t really go wrong with this one! As long as its well blended to a smooth constituency.
Toppings are always fun, and we normally set the table with lots of options and let everyone pick their own. Toppings include tahini, peanut butter, more banana (sometimes caramelised), berries (normally blue berries), coconut yogurt, nuts, seeds and drizzles of honey or maple syrup. My mum’s fig tree is absolutely loaded at the moment, so this week for a change we had caramelised figs and walnuts as our topping, but every week is different. The fussy eatings can also eat them plain.
The following recipe will feed two hungry adults or a snack for a family of four, so you may need to double up to feed more.
INGREDIENTS
-2 large bananas
-4 eggs
-1/2 cup oats
-1 Tbsp chia seeds
-1 Tbsp linseeds
-1 scoop of vanilla protein powder or vanilla essence (or both)
-1 Tbsp cinnamon
-Coconut oil for cooking
-Toppings of choice
METHOD:
-Put all ingredients into a blender until smooth
-Heat a large fry pan with 1tsp of coconut oil
-Once hot, pour batter in the pan to desired pancake size
-Watch for bubbles to form and then carefully flip
-You may need to add more coconut oil as you go to ensure the pancake doesn’t stick
-Put onto a plate and serve with your favourite toppings
