Guilt-free spicy gingerbread men
These guilt-free spicy gingerbread men are gluten-free, vegan, refined sugar-free, delish and will get you in the festive spirit.
My sister and I decided to make ginger bread men this year to give as gift and had so much fun making and decorating them. Great to do with kids or as a big kid :)
Ingredients
1 1/2 cups of almond flour
1/4 cup of arrowroot or tapioca starch
2 1/2 teaspoons ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1/4 teaspoon cardamom
1/8 teaspoon salt
2 tablespoons of melted coconut oil
1/4 cup of pure maple syrup
1 tablespoon of blackstrap molasses
extra arrowroot/tapioca starch for rolling
Instructions
Preheat ovan to 175 degrees and line a baking sheet with baking paper.
In a large bowl combined all dry ingredients and stir.
Add melted coconut oil, maple syrup and molasses and stir until sticky dough is formed.
Place dough in the freezer for at least 30 minutes (or overnight).
Place dough on baking paper with arrowroot flour and roll out with a rolling pin until 1/4 inch thick.
Use gingerbread men cutters (or whatever you have) and place on baking tray with baking paper. Re-roll dough when you run out of space. You may need to put back in the fridge if gets sticky and lay down more flour.
Place in the oven and cook for 10-15 minutes depending on how crunchy you want them.
Allow to cool and then ice and decorate!
